A History of Agave

For centuries, agave has played an integral role in the lives of the people of Mexico. Its versatile leaves were used to create everything from clothing to roofing materials, while the sweet sap extracted from the heart of the plant was fermented to produce the beloved beverages tequila and mezcal.

In the 16th century, Spanish conquistadors introduced distillation techniques to Mexico, which led to the development of tequila. This spirit quickly gained popularity both domestically and internationally, and today it is one of Mexico's most iconic products.

The Agave Landscape

The Agave Landscape is a vast and diverse region that encompasses a wide range of ecosystems, from lush rainforests to arid deserts. However, it is the presence of blue agave plants that truly defines this region.

Blue agave is a succulent plant with thick, spiky leaves. It can take up to 8 years for a blue agave plant to reach maturity, at which point it is ready to be harvested. The heart of the plant, known as the piña, is used to produce tequila and mezcal.

Tequila and Mezcal Production

Tequila and mezcal are both produced from the heart of the blue agave plant. However, there are some key differences in the production process.

Tequila is made from 100% blue agave that is grown in the designated Tequila region of Mexico. The agave is cooked in ovens, then crushed to extract the juice. The juice is then fermented and distilled twice.

Mezcal can be made from any type of agave, but it is most commonly made from espadín agave. Mezcal is produced in a similar way to tequila, but the agave is typically cooked in underground pits. This gives mezcal a smoky flavor that is distinct from tequila.
